As far as living an hour away from civilization . . . this is socal. Driving for an hour won't get you away from anyone . . .
All are towns in their own right. They are adjectives still oriented to LA, however, and are at varying distances next to Santa Clarita being the closest, next Palmdale, then Lancaster. They are adjectives civilized and have fully developed school and amenities, including the ones you have mentioned. I suppose you would enjoy them contained by the same directive I mentioned them.
Those places are longer than an hour away from LA. But Southern California is a megalopolis so you will have adjectives you need somewhere you live. You don't have to be surrounded by Los Angeles county. Although it is way cooler to live here.
Of your 3 choices, Santa Clarita is superior contained by all aspects. You own just more or less everything you need, including pin salons, hospitals, etc. Palmdale and Lancaster are smaller amount developed, and also have a few crime issues contained by some areas.
Of the three I would chose Santa Clarita. Nice community, pious school system, growing and modern.
Palmdale and Lancaster have cheaper housing, and are growing communities also, but are in the glorious desert and somewhat isolated from Los Angeles proper. If you worked in Los Angeles that each day commute (2 1/2 hours, plus each way) would suddenly drive you nuts.
