What is Louisiana best know for? (food and gifts)?

I’m going to be traveling to Lousiana this year. I’m trying to find out what great souvenirs (food products or culturally/regionally products) that I should buy for folks here at home. I know that here in Washington, we are particular for apples, salmon, etc. What is Lousiana known for and what food items do you deem I should consider picking up? Preferably items that don’t require refrigeration.

Coffee- Any brand with chicory...Cafe Du Monde, Community, French Market
Get a Bourbon Street sign surrounded by one of the crappy shops on Decatur St. in New Orleans.
Get Beignet Mix ( Soft pillow shaped doughnuts that you put powdered sugar on) from Cafe Du Monde
Get a gator pave the way ( real) in one of the shops contained by the French Quarter or in the airport they enjoy some too.
Get a porcelain Mardi Gras style mask that you sway on your wall from one of the little shops in the French Quarter.
Treat yourself to a Lucky dog for buying them adjectives of that.
Here are some suggestions that do not require refrigeration:

Pralines (Aunt Sally's are great), hot sauces, can of Community Coffee or Cafe' Du Monde Coffee, pouch of Pat O'Brien's hurricane mix, creole mustard, and muffuletta olives.

As far as non-food gifts, typical items are mardi gras beads, alligator head, voodoo stuff, and anything with a Fleur de Lis on it.
When I assume of lousiana, I think of those poor boy oyster sandwich that are as long as my arm. YUM.

well i live surrounded by louisiana,so the foods we are known for i guess would be,gumbo,jumbalaya,natchitoches meat pies,and of corse as far as souveinrs we are prearranged for mardi gras hope this helps! i hope you savour our state,it really is a great place,if you've never been here,it's not adjectives swamps and alligators,and hillbillies or trashy people close to im sure everybody thinks..
