When does it start getting cold surrounded by Texas (towards the houston area)?

Answers:
never. it might get cold delayed december, early january
Mid December is when it starts getting cold. You'll have a few days next to the overnight low below freezing in January and February... as a rule.

Of course we had temps around freezing within March and April too this year.
January and February are the coldest months of the year.
In texas you never really know. The texas weather is all screwed up. It can be 91 soon and 32 the next.
Just scrutinize the weather forecast
You never know. Last time I lived in Houston during the winter two years ago, within was a few days where on earth it would be in the 20's later be 50 something the next daytime. And a couple years before I moved out, it actually snowed contained by Houston.
You can expect the first concrete cold front usually in October. By unadulterated cold front, I mean the ones that knock the temp down to the 70s for a giant. Of course, it could be 90 the next daytime though. :)
It actually starts to procure cold in December, but as for "oh my god, we obligation a coat!" cold, that's in January and Febuary.

It doesn't really snow here. The second time we had snow be 3 years ago, and before that, it be close to 20 years, so don't look foward to any.
