Whale Watching from about December to March, even into April. Snorkeling on Maui can be amazing. Maui Ocean Center is pretty cool. The Road to Hana is great if you allow the time. I still want to see the Piilani Heiau and the National Tropical Botanical Garden out in that.
The show 'ulalena is worth the money. I've seen it 3 times!
You can hike up the volcano. I do alert you that its a long way up. You can also shop within Lahaina. They have cool shops and some great restaurants. You HAVE to walk to Cheeseburger in Paradise and Bubba Gumps. They are really upright.
My favorite thing to do is drive to Hana. The road to Hana is is the most wonderful drive, 56 miles, with waterfall and rainforests. There are so many things to do outdoors within including swimming in the pool of waterfall, snorkeling, hiking and more. Just past Hana you do not want to miss going to Seven Sisters. Start your move early as the drive take longer than you think and you want to enjoy lots of time to enjoy Hana's aesthetic. I suggest packing a picnic lunch although there are places to bring food in Hana. But a picnic is much more fun.
