What are some appropriate amusement parks beside roller coasters surrounded by Arizona?
Preferably one in the Phoenix region or toward the north

There are no amusement parks contained by Arizona. There is a place, like golf arrive where you play miniature golf and arcade games, and they own a couple of "roller coasters". I wouldn't waste my time or money to ride them. You would enjoy more fun at one of the area resorts limp out at their pool/water park area or conceivably one of the local waterparks.
The with the sole purpose "amusement" park is Arizona is called Castles & Coasters. It have 1 roller coaster and 1 roller coaster for kids. It's mainly a mini-golf course place. You can other wait for the State Fair to come around every October/November and they hold plenty of rides then - but they aren't the safest.
castle and coaters is it. but be warned-it's not contained by a very secure area (quite gang infested actually-i won't budge near the place).

Other than Castles and Coasters there aren't any.
Castles and Coasters on I-17 and Peoria by the Metro center Mall.
golfland in chandler/mesa it doesnt enjoy rides but it has a upright go kart track
