I had a country house within the Catskills for over 10 years. It depends where within the Catskills you are - it varies by town and county. In standard think Nature. I snowshoed and fly fished myself, depending on season. My wife gardened and bird watch. There is good skiing at Hunter Mountain and cross country skiing anywhere within the region. Other than that there is Skating (roller and rime in season), bowling, harness race, restaurants, hikeing and lots of drinking. My then teen-age daughter loved going to WalMart since we don't own them in NYC, but we tried to discourage her from this.
For winter...downhill skiing (Hunter Mountain, Ski Windham, Cortina Valley), cross country skiing (Belleyare Mountain) as well as hiking.
During the spring/summer you can travel tubing along the Esopus River in Ulster County, outlook trails, bird watching, biking, hiking, fishing, camping.
Around precipitate to mid October, you can check out the fall foliage contained by the Catskills.
