Well you know it depends if your taking small children next to you or not. For the smaller ones, Peter Pan is a fun ride along with the Tea cups and Mr. Toads Wild Ride.
Now for the elder kids or adults, we like Indiana Jones and the Temple of Doom, Splash Mountain, Thunder Mountain and obviously can't pass up The Haunted Mansion and Pirates of the Caribbean.

I've always approaching the Matterhorn best. Space Mountain is OK, too, but the Matterhorn is (was?) unique to Disneyland California.
Indiana Jones and Star Tours are my faves.
